Artichokes are harvested from March to May at the optimum degree of ripeness and then calibrated and scalded for few minutes. Leaves are taken away in order to have only the heart of the artichoke. At the right time they are washed and dressed with vinegar , salt and stored in glass jars in Bonamini olive oil.
Excellent on canapés or pizza and any row or cooked dish
Preservation: After use cover the artichokes with extra virgin olive oil
